When I was making my Girl Dinner Menu I really envisioned comfort foods and small bites. Pulling up to a restaurant with the girls and ordering some weekend cocktails and sharing apps, is a love language. It's not always feasible with schedules and finances. Going to restaurants all the time is a luxury for most people (me included!) so I wanted to form a menu all about "girl dinner". I have mentioned it before (and will again) I personally think Chili's has nailed it when it comes to the menu/ atmosphere. The appetizers are always perfect and the drinks are great and cheap. I wanted to emulate my own versions of some of the apps and drinks I have shared with my girls throughout all phases of my life.
In this recipe, I highlight a staple. Sliders are the best because you get to have all the fun of a prime bite, and not the commitment of a huge bar burger. You can double or triple the recipe (they go fast!) or do what I did on my "girl dinner" menu, make lots of other little apps! The hook for me with sliders is it gives the ideal taste and then I move on to taste all the other things! For these sliders I added chopped kosher dill pickles, salt, pepper, chopped white onion and yellow mustard straight into the beef. It gives that quintessential American burger flavor. I sear the sliders off on the stove before finishing them in the oven on mini burger buns/ rolls. Topped with sharp cheddar cheese, bacon slides and lettuce it's a flawless slider.

What You'll Need:
1 package dinner rolls/ slider buns of choice
3 slices of sharp cheddar
1 lb 85/15% beef
1 tsp salt1 black pepper
1 tbsp yellow mustard
1/3 cup chopped dill pickles
1/2 cup diced white onion
1 egg
2 tbsp flour
For Topping:
About 8 romain Lettuce slices
4 slices of bacon, cooked cut in half
Let's Make It:
In a large bowl, add in your chopped onion and pickles, beef, salt, pepper, and mustard. Crack in your egg, and add your flour. Mix together with clean hands.
Set a large pan on medium/ high heat. While it comes up to temperature, scoop a palm sized amount of your slider mix into your palm. Flatten it with your palms and place them onto the hot pan. Sear on each side for about 90 seconds. We are looking for that crust.
Cut your slider buns in half to open them up. Spread about 1 tbsp of mayo on the top bun, and layer 3 large slices of sharp cheddar over the area of all the top buns. Toast tops and bottoms lightly under your broiler for about 1 min.
After toasting the buns and cheese, Preheat your oven to 400°F.
Place your seared sliders on top of all your slider buns on a large cookie sheet. Place the top buns on all the sliders and bake together for 5 minutes.
Top your sliders with bacon, lettuce and any toppings you like!
